
Late Harvest Riesling, Elk Cove 'Ultima'
Golden-hued and luscious, with notes of honey, candied citrus, ripe stone fruit, and floral lift. Rich sweetness is balanced by lively acidity, keeping the wine vibrant rather than cloying. Riesling forms the core of the blend, providing the primary weight and notes of apricot, pear, and honey. Gewürztraminer contributes spicy notes and adds complexity to the wine while Muscat Blanc is included to add delicate aromatics to the blend.
Crafted only in select years when botrytis [noble rot] develops on Riesling fruit, giving added complexity and concentration. These vintages are rare and represent late-season richness in Willamette Valley.
5–20% botrytis-affected grapes. Whole-cluster pressed, then cold-fermented in stainless steel to preserve aromatics, freshness, and bright acidity while balancing natural sweetness.
