On the palate, aromas of ripe berries, cocoa, leather, and spices give way to red fruits and blackcurrant. These are supported by silky, smooth tannins.
Their search for so-called 'pure' fruit leads them to pick Syrahs and Grenaches that have not yet finished ripening. Fermentation begins at a temperature of 22°C/72°F. Pumping is carried out daily until the sugars are consumed. Each vat is tasted before and after each stage. Finally, they implement 'millefeuille co-fermentation': this is a complex technique during which they alternate between layers of destemmed grapes and whole grapes of three to four different grape varieties.
The Domaine de Nizas covers 40 hectares. This estate is composed exclusively of noble grape varieties, including 60-year-old Carignan and selected clones of Grenache and Syrah. The vines benefit from excellent climatic conditions: light northerly winds blowing over the mountains toward the sea, and Mediterranean sunshine 320 days a year. This privileged environment thus ensures the protection and longevity of the vineyard, which finds its roots in viticulture that respects nature.
The history of Domaine de Nizas is above all that of a terroir, but also that of personalities passionate about wines and terroirs. It was in 2018 that François Lurton, flying winemaker and descendant of a family of Bordeaux producers, took over the reins of Domaine de Nizas in Pézenas [34], located in the heart of the Mediterranean, in a land favorable by its climate and its geographical location. He chose this cradle of viticulture since antiquity, to plant vines and start a beautiful human adventure.
A true visionary in the world of wine, François Lurton's ambition was to create great wines from exceptional terroirs. In France, it was the Languedoc region that attracted him, and more specifically the terroir located between Caux, Nizas, and Pézenas, whose great potential he recognized by selecting suitable plots and the right grape varieties.
