Thomas Ayoun and Marie-Sophie Jullien – sister of Thomas Jullien of Ferme Saint-Martin – have after five years of work given new life to the Ayoun family mas (the Provencal word for a traditional family farm) located at the foot of Mont Ventoux, 20 minutes east of Carpentras. And though 2019 was only their first vintage, the wine is redolent of talent. Thomas cut his winemaking teeth across the region, with stints as cellar master at Domaine des Garances in Beaumes-de-Venise, at Château de la Font du Loup on the heights of Châteauneuf-du-Pape, and more recently at Domaine des Escaravailles in Rasteau. Originally from the commune of Mormoiron, the young winegrower’s new adventure represents a real return to his roots, and a chance to unveil the full potential of his terroir, using every means imaginable! Polyculture, biodynamics, wild vines, maturing in huge century-old amphorae... and he’s succeeding already, creating wines of incredible finesse, freshness, and fruit. It's pure juice!
