Gamay, Domaine de Fagolet
Domaine Le Fagolet is an 18 hectare vineyard located in the town of Vaux en Beaujolais (Clochemerle), which has been passed down from generation to generation since 1850. Paul Girard is the current winegrower harvesting since 1980. Grapes are harvested by hand while respecting the environment. The grapes are sorted on the vine before being transported to the vat. Thanks to the construction of a new cellar fully equipped for vinification (in 1986), Domaine Le Fagolet has grown a lot. The plots that make up the Domaine are mostly planted on our slopes (30% slope at the highest), which gives their wines particular and unique organoleptic properties. The plot proportion of the farm is divided between the Gamay grape (98%) and the Chardonnay grape (2%).
VINE AGE: 10-42 years, hand harvested, fully destemmed.
FERMENTATION: Indigenous Yeast, stainless steel tank fermentation, Full Malolactic Fermentation
AGING: 1 year in bottle, zero oak
